See you at the poll. [/bad pun] Anyway, how do you go about choosing which pieces to compose? Do you do only epic pieces that "sound really good"? Is difficulty a factor? What else is? How do you decide what to make?
For me, I'm actually familiarity-conscious. I have a "palette" of games per se, and I generally prefer to do only pieces that are on that palette. Of course, every now and then there's an oddball (such as my classical works), but for the most part I won't do a piece unless it's from a game in my palette or unless I want to include a game in my palette.

Hmmm. I'm sort of a mix of a few of those... Every so often, I might just throw out something to increase my popularity (that was what I wanted with One Final Effort...), but then sometimes I go classical because they tend to be more... hmmm... developed than video game pieces.
I suppose I do choose from specific games though, and I generally pick pieces from games that I think are especially good or I know and love.

You should be able to select multiple...
A combination of familiarity and difficulty for me. Obviously, half my stuff's RL music, so "d'you do pieces from specific games?" doesn't pertain 100%. But yes, I only ever do game songs that I know, and RL music that I like. I have yet to take a request, but I swear I will when I finish Inside the Fire (Blow Me Away and BYOB are gonna take too long to make people wait for requests. I'll just keep chipping away at them).

This is my guide top finding the best pieces to compose.
*Megaman Music*- This is the highest level of music to compose
Real Life music- This way, no matter who the viewer is, they will have some familarity with the piece.
Recent/Popular music- This makes the video a magnet to views, internet memes help as well.
Now, that is how to get views. On the other hand, don't push yourself too hard. Some music just isn't possible. You can either-- Not do it, or embarass yourself trying. So, for me, the easiest way to go, is pixelated, catchy, NO VOCALS, video game music.

Well, if you could select multiple, that would defeat the purpose of the question. It's a hard question, when you think about it. It requires a bit of consideration, and I'm not surprised that it's difficult to make a decision. When I was making the dungeons of Link's Awakening and the Oracle games, there are obviously some that have much better and more entertaining themes than others. I was actually tempted to skip the ones of lesser quality, but I didn't. This is how I realized the familiarity is top to quality, but the latter is still a factor. When I consider difficulty, I actually don't think in terms of hard or easy. I think "Will this sound good on Mario Paint?" And if that's a yes, I move on. If it's a no, I don't make the piece.

Let's narrow down the options for vocals.
There's flowers and cars. And, that's an organ and a trumpet. Not quite.
Maybe it's just me, but I find avoiding vocals helps.

You can use orch. hits, steel drums, sine wave, square wave, trumpet, sax, organ, MAYBE flute...
Just mix the sounds well, and you can make a voice fine.

Use cars (when they aren't needed elsewhere), gameboys, flowers, dogs (for low stuff), or mario heads. As for me, I'd say familiarity. I don't really care how popular any of my videos get. I just want to make songs that I know and want to do. except for maybe my upcoming project, which is half for views and half for personal desire

I try to do ones that haven't be done before or haven't been done properly.

I just do songs I like. Mostly Mega Man, as I am very familiar with it and it's fairly simple to do, but sounds really good.

I mainly choose what to do based on what appeals to me most at the time. For instance, the recent onslaught of Megaman X music from me is because, well, that's what appeals to me right now.

I just do stuff that sounds good to my ears. I sometimes just browse OSTs until I find something that sounds nice. It doesn't matter where it is from (10/16 are from games I have never played) just as long as it sounds good. That is not to say, the difficulty doesn't matter to me, but that is mostly a matter of whether or not it well translate well into MPC. Effectively, what brianLED said: When I consider difficulty, I actually don't think in terms of hard or easy. I think "Will this sound good on Mario Paint?" And if that's a yes, I move on. If it's a no, I don't make the piece.

I do songs based on a combination of quality, familiarity, and difficulty. And sometimes request.

I'm a mixture of reasons. I'd say difficulty tops it, though. It depends if I'm in the mood for a simple song or a harder one.

None of the above. I do originals mostly, so it fits into none of these categories. Sometimes I do songs that I like, but that's it.
