there should be NO question to whether you should use sharps or flats. It all depends on the key and scale you are using. You wouldn't use an A# in the Bb major scale, for instance, or a Gb in a D Major scale. MIDI files are not always consistent or accurate with such information, but a skilled musician will know when a note should or should not be written as sharp or flat. Consider taking some time out to learn more about them. Just a pet peeve of mine as a musician

super late post pft.
i am a pianist and i learn by ear so usually i split the circle of fifths between C#-Ab, equally using the accidentals. sometimes i see the occasional G#, cause imo an E major chord looks bad with an Ab, inversely an F minor chord looks bad with a G#
